Summer tacos!

I don't ever post recipes, but Wade and I have been eating these summer tacos like crazy and I wanted to share. The recipe is courtesy of Rachael Ray.

2-3 cups seedless red grapes chopped or quartered

1 red/purple onion finely chopped

1-2 jalapeno peppers, seeded and finely chopped

1/2 cup cilantro finely chopped

juice of one lime

salt and garlic salt to taste

one package crispy taco shells

one rotisserie chicken, pull off and shred chicken into pieces

In a medium bowl combine the first 6 ingredients together.

place the shredded chicken in a bowl and microwave about 30 seconds.

Stir in 1/2 of your grape salsa ingredients with chicken. Add 1 cup shredded cheddar cheese.

Divide the chicken/grape salsa mixture into the taco shells and top with more of the grape salsa.

Serve.

These are so delicious, and there is no baking involved. That is why I call them summer tacos. Enjoy!!

Introducing Eli!

Our new nephews Sam and Eli will be 3 weeks old on Wednesday. They are both doing much better and their collective weight is now over 5lbs. (They were 1 lb13 and 3 lb 1 oz at birth at 28 weeks) They are still at separate NICU's, but will both hopefully be at Children's by tomorrow. This picture is of the larger baby, Eli taken last night. He is so precious. Thank you all for your continued prayers!

We went our nephew Ty's bday party at a gym in Yukon on Friday night. Hayden had so much fun running around and playing ball with the big boys. His cousins gave him lots of attention and made him feel like such a big kid. It was difficult to get him to stop and take a break. On Saturday morning Hayden slept in until 9:15 which was a record. Thanks aunt Amy!!

While our new nephews were being born Wednesday night, Hayden and Harper got to have a sleep over at our house. These pictures are of the kiddos watching a cartoon in our room before bed. I will hopefully have pictures of Hayden's new cousins soon.

Wow, who would have thought you could find this much floral wallpaper in one house! At least it won't be here for long. Wade and I are pro's now at removing wall paper. The piranna remover works the best if anyone is needing to use some.
